Essay? quotes? how would i site something?

im reading a short story by E.B. White.. called Education.. .and im writing an essay on it. what would I do with "EDUCATION"? quotes, underline, italics? and if im taking out a quote from it... how would i quote it... for example "Dog is here" (PAragraph number line number or what)
